Instructions for preparation of Sweet Pongal Dish
- First, combine 1/2 cup rice and 1/4 cup moong dal in a pressure cooker (both soaked for 15 minutes).
- 2¼ cups of water should be added. Pressure cook for 4-5 whistles.
- Take care of the fact that the rice and dal are fully cooked, not left half raw.
- Add 1/4 cup water and 3/4 cup jaggery to a pan.
- Stir continuously until all of the jaggeries have melted.

- Simmer for 2 minutes, or until the jaggery and rice-dal combination are fully combined.

- Now heat 2 teaspoons of ghee in a small kadai and cook 10 whole cashews, 2 tablespoons of raisins, and 1 clove.
- Fill the sweet pongal with fried cashews and kishmish.

- 14 ripe but firm plums, halved and stoned (7 for the cake; 7 for the topping)
- 125ml fruity, full-bodied red wine
- 225g caster sugar
- 1 orange, divided into two parts: a cake and a topping.
- 2 cinnamon sticks go into the cake, and 1 is used for the topping
- 5 whole cloves
- 2 large eggs
- 120g Yogini Maida
- 12-14 pieces of Yogini Black raisin
- 80g ground almonds
- 1 tsp baking powder

Step 1 :
Set the oven’s temperature to 180°C/160°C fan/gas 4. Butter should be used to grease and line a 20 cm round spring form cake pan. Place the orange slices, cinnamon sticks, black raisins, cloves, 50g of caster sugar, red wine, and plums in a pot. Simmer the mixture for 6 to 8 minutes, or until the plums are tender. Turn off the heat and let the food cool completely. Drain the plums after they have cooled, saving the mulled wine syrup for later. Throw away the spices and orange slices, and set the plums aside.
Step 2 :
To create the cake batter, whip the butter and remaining caster sugar with an electric mixer for 3 to 4 minutes, or until light and fluffy.Add the one egg at a time, whisking well after each addition. Stir in the flour, almonds, baking powder, and ginger after adding them.
Step 3:
Place the cooked plums, cut-side up, on top of the batter in the prepared cake mould. Bake for 50 to 55 minutes, or until a skewer put in the center of the cake comes out clean.
Step 4 :
Prepare the topping while waiting. In a roasting pan, place the cut-side-up plum pieces, and add the brown sugar, orange juice, and cinnamon stick. The final 25 minutes of baking the cake should be spent roasting it in the oven.
Step 5:
Warm up the reserved mulled wine syrup in a small pot while the cake and plums simmer. For a few minutes, let it simmer and reduce until it becomes silky and syrupy.

- Pour the batter into the buttered cake pan and bake for nearly 90 minutes.
- Around the 80-minute point, begin checking for doneness. Because it bakes long and slow, this cake can take up to 2 hours in some ovens.
- After 80 minutes, use your best judgment and check in 10-15 minute intervals.
- Make sure to let the cake cool in the tin for about 10 minutes, then remove it from the tin or by releasing the sides of the springform tin and allowing it to cool completely.

Gosht Dum Biryani Recipe Ingredients including a measure of Powdered Spices
- 1kg bone-in cut into 1-2 inch pieces Mutton (freshly slaughtered if possible)
- 2 cups Basmati rice
- 6 Onions medium-sized sliced
- 6 tbsp oil
- 6 medium-sized peeled and halved Potatoes
- 6 tbsp Ghee
- 2 tbsp Red chili powder
- 1 tbsp Turmeric
- 2 cups Yogurt
- 5-inch piece Ginger
- 50g chopped Garlic, 8 medium-sized cloves for ground into a garlic paste
- 2 tbsp Biryani masala
- 10 pods of green cardamom
- ½ cup milk
- Saffron, 8 strands
- Atta flour, ½ cup

Instructions for making Dum Biryani
- Put 6 tbsp oil in a deep pan or kadai to completely cover the onions. Onions should be fried until crisp and browned. Drain then set apart.
- Yogurt, garlic and ginger paste, 2 tablespoons biryani masala, 1 tablespoon red chilli powder, a portion of the fried onions, and salt to taste should all be combined with the mutton. For one hour, marinate.
- In heated milk, soak the saffron. Place aside.
- Rice should be rinsed before a 30-minute soak in cold water. Drain then set apart.
- Boil potatoes with 2 tablespoons ghee, 1 tablespoon turmeric, and 1 tablespoon red chilli powder in water. Drain then set apart.
- In a thick pan or a pressure cooker, melt 2 tablespoons of ghee. Add the marinated mutton, and then cook it for 5 minutes on high heat. Add 1 cup of water, cover the pan, and simmer for 15 minutes at medium heat while stirring occasionally. Add potatoes to the mutton and boil for a while on low heat to thicken the gravy. If you have a dum, transfer to it; if not, use your broadest pot.
- Parboil rice for 10 minutes by adding five cups of water, cardamom and salt to taste until the mixture is approximately three-quarters done.
- Put a layer of strained rice on top of the mutton and potatoes. Include the remaining fried onions. Put 2 tablespoons of butter on the rice. Pour saffron milk on top of the mixture.
- Wrap the pan or dum. (Optional) Prepare bread dough in advance to use as a lid sealant to enhance flavor.
- Enjoy your dish with a raita made of cucumber and onions!
