The batter is made lighter and fluffier by adding air during the process of beating. The pakodas batter should look in soft texture, light, and fluffy.
- In a kadai or pan heat the oil properly for deep frying. With a small spoon, carefully drop spoonfuls of the batter into the hot oil as it begins to heat up. Fry the fritters over medium heat.
- Do not over group the kadai with the batter. Fry according to the kadai’s or pan’s size.
- Turn the food carefully with a slotted spoon over and fry the opposite side after the first side is golden and crisp.
- Continue frying the fritters after a few flips.
- Fry the fritters until they are crisp and golden.
