Aachi Sambar powder is a flavorful South Indian style coarse textured spices powder, prepared by grinding various types of basic Indian spices like coriander seeds, cumin seeds, mustard seeds, black peppercorns, dry red chilies, fenugreek seeds, cinnamon, dry coconut, etc. with chana dal.

 Aachi Rasam powder is just made with toor dal, pepper, coriander, jeera, red chilies, and hing. To make it flavorful and tasty, one can use the following ingredients: Chana dal lends a unique aroma and slightly thickens the rasam. Fenugreek seeds or methi seeds add a unique aroma and is also healthy.

Aachi Ground coriander is used as a spice in dishes like curry and in baked goods. Dry roast them in a pan or in the oven at a low temperature, then use a spice grinder to produce the ground coriander.

Vathakulambu Powder Preparation
Fry vathal in the required quantity of edible oil. Heat gingelly oil, add mustard seeds, dried red chilies, and saute. Add curry leaves, garlic, onions, and tomatoes, and cook well. Add 50g Aachi Vathakulambu Masala and 500ml of water. Then add coconut milk, fried vathal, and salt. Tasty Vathakulambu is ready-to-serve.
Option1: Fry a few garlic, small onion & finely cut tomatoes along with vathal and prepare as above.
Option2: Instead of vathal fry cauliflower / Drumstick / Mushroom / Ladies finger (200 gms) in oil along with option. Grind 1 tomato with a little coconut and add at the end before removing from the fire.
